Peanut rice
Dry roast some peanuts, urad dal, chana dal, sesame seeds, coconut, and dry red chillies and blend them to make a fine powder. Heat oil and add some mustard seeds and 3 tbsp peanuts. Now add 1 cup of cooked rice, a handful of curry leaves, and the prepared powder in it. Season with salt and serve hot.

Cabbage rice
In a pan, heat oil and add some mustard seeds, curry leaves, and cumin. Add chopped onions, green chillies, and cabbage along with grated carrots and capsicum. Sprinkle some salt, red chilli powder, and garam masala to season it. Now add cooked rice and stir. Cook for 5 minutes and remove from heat.
Tomato rice
To prepare this rice, take some oil in a pan and add mustard seeds, urad dal, cumin, cloves, and curry leaves. Cook them on high heat and let them splutter. Add some chopped onion, green chillies, and tomatoes to this along with some ginger garlic paste. Season it with red chilli powder, turmeric powder, salt, and coriander powder. Add 1 cup of cooked rice and mix well. Serve hot.

Coriander rice
Take an onion, a handful of green chillies, cloves, cinnamon, and coriander leaves, and blend them along with some water to make a paste. In a pan, add some chopped onions, one bay leaf, and ginger garlic paste in oil. Add finely chopped tomatoes, carrots, beans, capsicum, and the prepared paste. Finally, add 2 cups of cooked rice and mix well. Saute this for 5 minutes on high heat and serve hot.
