Breakfast is the most important meal of the day. When it comes to breakfast dishes, some popular choices include omelette, sandwiches, cereal, and frittata. A frittata is an egg-based Italian dish. The word frittata more or less means “fried” in Italian.
Frittatas are made with pre-cooked vegetables and are partially cooked on the stove. While the authentic recipe consists of eggs, we have for you a recipe consisting of chickpea flour instead of eggs to make delicious and vegan frittatas. So make mouth-watering vegan frittatas in just 5 simple steps at home.

Step 1
Add 2 tbsp olive oil in a pan along with some finely chopped onions, bell peppers, and mushrooms. Saute these for a minute or two on medium flame.
Step 2
To this, add some chopped spinach leaves and finely chopped garlic. Cook for 5-7 minutes and turn off the flame.
Step 3
Mix 2 tbsp olive oil, 1 cup chickpea flour, and ½ water in a bowl. Season it with some salt and pepper.

Step 4
Add ½ cup pre-cooked quinoa, the sauteed vegetables, and some roughly chopped parsley into the bowl. Mix well until combined.
Step 5
Preheat the oven to 200 degrees celsius. Pour the batter into a baking tray and bake it for 20-25 minutes. Once baked, let it cool for 2-3 minutes. Serve the frittatas by slicing them into wedges.
