Anda Masala
Ingredients:
· Eggs – 2
· Butter – 2 tbsp
· Onions – 30g
· Tomatoes – 40g
· Cumin powder – 1 tsp
· Coriander powder – 1 tsp
· Ginger garlic powder – 1 tsp
· Turmeric – ½ tsp
· Garam masala – ½ tsp
· Clove – 1
· Cardamom – 1
· Salt – To taste
· Kasuri methi – To garnish
Method:
· Boil two eggs and peeling them. Then prick them with a fork.
· Heat two tablespoons of butter in the pan and add 30g of onions, one teaspoon cumin powder, one teaspoon of coriander powder, one teaspoon of ginger garlic paste, salt, half a teaspoon of turmeric, half a teaspoon of garam masala, one clove, one cardamom and fry together till the onions are golden.
· Add 40g tomatoes and cook for a minute.
· Add eggs, mix well and cook till the eggs start to get some colour.
· Add half a cup of water and cover and cook for ten minutes.
· Stir occasionally to ensure nothing burns.
· Season to taste. Add kasuri methi and mix it well. Finish with coriander and serve.
