The celebration of Eid is incomplete without the sweet delicacies that add to it. The true essence of this festival lies in its food and mainly its dessert items! Here are some spectacular recipes you can try out to end your fast with.

With Ramzaan coming to an end, the celebrations of Eid are just beginning. It is not only the festival of togetherness but also the celebration of spectacular food! Eid is celebrated after a month of fasting and while animal sacrifice is a huge part of it, so are sweet delicacies. Contrary to popular belief, the festival is not just about biryani and kebab! Here are some easy recipes you can whip up, to celebrate the festival. 

Rabri

Served with piping hot jalebis or eaten just as is, rabadi is one of the best delicacies that can be consumed post food. 

Ingredients:

Milk - 1 litres

sugar - 0.5 cups

Saffron - 1 pinch

Khoya - 100 gm

Green Cardamom - 1 tsp

Rose water - 4 drops

Method:

Boil the milk till it is reduced to half. 

Grate the khoya and add it to the milk while it is still on the stove. Stir continuously so that no lumps are formed. 

Add the gugar and cardamom to this boiling mixture and continue to mix. 

Once this is thick enough, allow it to cool and then add the saffron and rose water and stir well. 

Refrigerate and serve once cooled. 

Phirni

This simple dish makes for the perfect dessert to serve on the special occasion of Eid. 

Ingredients:

Milk - 1 litre

Sugar - 1 cup

Rose water - 5 drops

Saffron - 5 strands

Rice flour - 75 gm

Basmati rice (soaked) - 50 gm

Green cardamom - 0.5 tsp

Pistachios - 10 

Almonds - 25 gm

Method:

Boil the milk so it reduces to half its quantity. 

Grind the rise till it forms a paste. Add a little milk to this to make it a little thinner. 

Add sugar to the remaining milk while it continues to boil. 

While the milk is still boiling, add the rice paste and stir. 

Add the cardamom and rose water and set aside for 2-3 hours. 

Garnish with cut up almonds and pistachios before serving. 

Malpua

Enjoyed with rabadi or as is, this Indian delicacy is known as the "Indian pancake". 

Ingredients:

Flour - 1 cup

Almonds - 2 tbsp

Saffron - 1 tsp

Wheat flour - 0.5 cup

Pistachios - 2 tbsp

Ghee - 2 cups

Sugar - 0.5 cups

Milk and water

Method:

To make the malpua batter, add the flour, wheat flour and a little milk and mix well until the batter is made without lumps. Allow this to rest for 30 mins. 

Soak the almonds and pistachios in water. 

To make the sugar syrup, in a pan add the sugar and some water and keep it on a low flame until the sugar melts and a sticky syrup is formed. Add saffron once the syrup is formed. 

To prepare the malpuas, put a pan on medium flame and add some ghee once the pan is hot enough. Pout 3 spoons of the batter on the pan and spread into a round shape. 

Fry the batter well until it is crisp and then lay them on paper towels so the extra ghee is taken out. 

Add the syrup on top. 

Kheer with dates

One of the oldest and most famous desserts, kheer is served best when cold. 

Ingredients:

Milk - 2 cups

Cashews - 1 tbsp

Ghee - 1 tbsp

Black dates without seeds - 15

Coconut milk - 0.5 cup

Almonds - 1 tbsp

Method:

Soak the dates in warm water for around 30 minutes and then grind them in a mixer with the help of milk. 

Boil the milk on the stove and slowly add the ground mixture. 

Add the other ingredients and stir well for around 8-10 minutes until it forms a thick consistency. 

Serve warm or chilled. 

Doodh Dulari

It tasted amazing and looks delightful. This dessert is definitely one you can feast on!

Ingredients:

Condensed milk - 0.5 cups

Milk - 2 litres

Corn flour - 1 tbsp

Vermiceli - 1 cup

Strawberry jelly - 1 packet

Green jelly - 1 packet

Thick cream - 200 gms

Fruit juice - 200 ml

Method:

First make the jelly. All you need to do is add the ingredients of the jelly packet to water and leave it in the refrigerator till it is firm. 

Boil the milk and add the vermiceli to it and stir well. 

Add the corn flour to this and stir well. 

Once this has cooled, add the condensed milk and mized fruit juice to this and stir well. 

Cut both the jellies and add them to this cooled mixture and eat it when chilled.
