Who doesn't love a hearty, yummy breakfast? It's officially the most important meal and sets the mood for the day. However, you'll often notice how preparing breakfast is sometimes not the easiest task, especially for the girl-on-the-go, like me. We run a tight schedule and there's barely any time to fry an egg, leave alone make something fancy.
However, if you're as big a foodie as I am, weekends are the time you can get down and dirty in the kitchen and experiment with different foods. Also, there's a different pleasure in preparing a scrumptious meal on a lazy Saturday or Sunday morning. It's just that whole off-day vibe. I'm sure you know what I mean!
Today, to kill the mid-week blues, I thought of putting together some super delectable breakfast recipes that will give you that happy feeling in your heart, mind and of course, tummy! Forget the staple fried eggs, oats and toast and indulge in a little bit of heaven.
All you occasional chef's out there, get out your hats and aprons, 'cause some serious cooking's about to go down...
1. Pancakes

In a small bowl, combine milk, egg and butter; beat in a bowl till blended. In another bowl, combine flour, cocoa powder, sugar, baking soda and salt; mix well. Add milk mixture; whisk just until dry ingredients are moistened. (Batter will be slightly lumpy.) Heat a pan over medium heat until hot. For each pancake, pour 1/4 cup batter into the pan. Cook 1-2 minutes or until batter is set around edges. Carefully turn over pancake; cook 1-2 minutes or until pancakes are cooked through. Repeat with remaining batter. Sprinkle pancakes with powdered sugar; serve warm with desired toppings that could be ANYTHING at all!
2. Dal ka paratha

Sieve the flour and knead to a soft dough by adding enough water. Keep aside. Drain the dal and cook in 1 cup of water. Heat oil in a pan; add the cumin seeds, asafoetida. When the seeds splutter, add the cooked dal, salt, turmeric powder, chilli powder and mix well. Cook until the dal mixture is dry. Let it cool. Break small rounds of the dough. Roll each round a little flat and place some filling in the centre. Close from all sides and roll as thin as you can without tearing. Heat a tawa (griddle), and fry the parantha with the ghee, till brown on both sides.
3. Bread Manchurian

Make a thin batter with the cornflour, maida, pepper, salt and water. Keep aside. Dip the bread slices in the batter and shallow fry them on a tawa on both sides along with 1 tsp. of oil till golden in colour. Do it the same way with the other bread slices and chop them to bite size pieces. Keep aside. Heat oil in a pan and saute the onion, capsicum, green chillies, ginger and garlic till slightly soft but still crunchy. Add the red chilli powder, soya sauce, vinegar, 2 tbsp. water, sugar and salt to taste. When the sauce thickens, add the fried bread slices. Mix well so that they are well coated with the sauce. Serve hot along with veg. fried rice.
4. Masala French Toast

To begin, beat the eggs in a mixing bowl. Add milk, beat it again and make sure that it is mixed properly. Add chilli flakes, salt and black pepper. Once it is done, heat oil in a wide pan. Take a bread slice, dip it in the egg mixture and put it on the pan. Spread some onion, green chillies and coriander on the top of bread and pour some egg mixture on it again. Turn the bread and let the other side also cooked properly. Once it turns light brown in colour, take it out of the stove and it is ready to be served.
5. Open Toast With Egg, Tomato & Spinach

To begin with the Open Toast with Egg, Tomatoes And Spinach recipe, heat the skillet and add 2 tablespoon oil, as the oil heats up add tomato slices and grill them for a minute and remove them. In the next step to the same skillet add chopped spinach leaves and a pinch of salt to it and sauté till the spinach leaves wilt. Remove the spinach from the skillet and gently toast the bread slices. After toasting the bread now pour one egg in the skillet, cook till the whites get cooked. Add black pepper and salt to the egg and remove it from the skillet. To arrange the open faced toast with egg, tomato and spinach. Place one toast and add half part of the spinach to it. Add 4 slices of tomato on each corner of the toast and place the fried egg on top of it. For the second toast repeat the same. To garnish the Open toast add chilli flakes on top of the fried egg.
