Salads have become quite popular in health circles as they are not just nutritious but also quick and easy to make. Gone are the days when salad as lunch and dinner were considered only for the models. Now, it is a regular dish among junta. If you think salads are just for healthy eaters, celebs and weight watchers then you are wrong as foodies can also go for them as they give a lovely burst of flavours leaving your tastebuds and gut both happy.
Also, many find salads boring as usually, they are plain with full of lettuce but thanks to some food enthusiasts and chefs who have experimented with salads and have come up with varied finger-licking salad dishes. And today, I have compiled four lip-smacking, flavourful salad recipes by celebrity chef Ranveer Brar. These salad recipes are super easy to make, brimming with healthy nutrients and are not just bland and leafy.
Grilled Tofu with Mango Vinaigrette
Ingredients:
For Salad
250 gms grilled Tofu, sliced
½ mango, cut into cubes
2 tbsp pomegranate seeds
¼ medium red onion, sliced
few black olives, chopped
100 gms any salad leaves
Dressing:
1 medium very ripe mango, peeled and pitted
½ cup of water
¼ cup of extra-virgin olive oil
2 tbsp honey
2-4 tbsp apple cider vinegar
¼ tsp crushed red pepper flakes (more or less to taste)
Salt as per taste
½ tsp black pepper
Method:
Add all the dressing ingredients into a blender and mix well. Now on salad plate add salad leaves, mango, onion, black olives pomegranate leaves. Top it up with sliced grilled tofu and drizzle dressing before serving.

Shrimp & Mango Salad
Ingredients:
For Shrimp
200 gms Shrimp, cleaned
Salt as per taste
1 tbsp Olive oil
½ no Lime Juice
100 gms Totapuri mango/any semi-ripe mango, juliennes
½ Onion, sliced
¼ cup sweet corn, cooked
5-6 Cherry tomato, cut into half
2 cups Arugula leaves
For dressing:
2 tbsp Lemon Juice
2 tbsp Olive Oil
Salt
1 tsp lime zest
Method:
For shrimp, apply salt, oil and lime juice. Heat a non-stick pan and put shrimp. Cook for 2 minutes each side. Remove & keep them aside to cool down. Meanwhile, add all the ingredients of dressing in a small bowl & mix well. In mixing bowl, add mango, onion, cherry tomatoes, prepared shrimp, arugula leaves & dressing. Toss well and serve immediately.

Muli Aur Methi Ka Salad
Ingredients:
For Dressing:
1 tbsp Lemon Juice
1 tsp Oil
1 tsp Green Chilies, finely chopped
½ tsp Chaat Masala
Salt, to taste
For Salad:
1 Small bunch Samudra methi leaves/Fenugreek leaves
2 Small Radish with leaves
1 Large Tomato
1 Large Onion
2 tbsp Roasted Peanuts
For Tempering:
1 tbsp Peanut oil
4-5 Large Garlic Cloves smashed
Method:
For the dressing, in a bowl take lemon juice and add oil in a thin stream while whisking. To this, add rest of the ingredients and mix well. Keep it aside. Now, roughly chop methi leaves and radish leaves. Dice the radish, tomato and onion. Combine all the vegetables and add the dressing and mix well. Now, heat oil in a pan. Saute garlic till golden. Add peanuts and pour this hot tempering on the salad and serve.

Apple and Fennel Salad
Ingredients:
1 cup Fennel, cut into strips
2 tbsp Celery, cut into small cubes
½ cup Apple, cut lengthwise
¼ cup Red Raddish, small roundels
¼ cup Walnuts
For dressing:
2 tbsp Olive oil
2 tsp Lime juice
1 tsp Apple cider vinegar
1 tsp Honey
Salt to taste
For garnish:
4-5 Parmesan strips
Few Coriander sprigs
Method:
For the salad, toss all the ingredients together and place on the serving plate. For the dressing mix all the ingredients and drizzle it over the salad. Now, garnish the salad with parmesan strips and coriander sprigs and serve immediately.
