Are you one of those who have a habit of getting up late and often end up skipping breakfast Well, then having a brunch is a perfect option for you to have a wholesome meal without stuffing yourself too much. Brunch is a combination of breakfast and lunch and is usually eaten anytime before 2 o’clock.

Since it is a breakfast-lunch hybrid, it has to be hearty and filling. It can involve a variety of dishes ranging from savoury to sweet ones. So we have for you 4 quick and easy brunch recipes that you can try at home and satiate your cravings in the tastiest way possible!

Burritos

In a bowl, mix some chipotle paste (made by blending 10-15 chipotle chillies, 2-3 cloves of garlic, lemon juice, sugar, salt and cumin powder with very little water) with an egg and season with some salt and pepper. Saute 2 chopped tomatoes and 30 grams of kale in oil for 2-3 minutes. In another pan, add the egg mixture and scramble it. Add the tomatoes and kale and wrap it into a tortilla wrap.

Napa Cabbage Salad

Mix 1 sliced fennel bulb, 1 shredded napa cabbage, 2 sliced carrots, 1 chopped avocado and 1 sliced radish in a bowl. Make the dressing by mixing 2 tbsp olive oil, lemon juice, 1 tsp miso paste, 1 tsp grated ginger and 1 clove of garlic pressed. Add the dressing to the vegetables and mix well. 

Chicken Burger

Mix 200 grams minced chicken, 1 finely chopped onion, 2-3 cloves of garlic, grated ginger, salt, coriander powder and red chilli powder in a bowl along with some olive oil. Mix well and make patties from the mixture. Cut a burger bun in half and press the mixture between the two halves. Cook the burger on a grill for 5-6 minutes.

Deviled Eggs

Cook the 3 eggs in water on high heat till it comes to a boil. Reduce the heat to medium and cook for 2 minutes. Once boiled, rinse the eggs under cold water. Peel the eggs and separate the yolk from them. In a bowl, mix the egg yolks with 1 tsp vinegar, 1 tbsp mustard, 2 tbsp mayonnaise and some salt and pepper. Place this mixture in the egg whites and serve.
